Immersion au cœur des tendances de la food de demain avec le SIAL Food Club 

Jeudi 17 septembre, j’ai eu la chance de participer au SIAL Food Club, le tout premier afterwork influence organisé par SIAL Paris (le salon international de l’agroalimentaire) à l’approche du SIAL Paris 2026. Une soirée riche en échanges, en rencontres et en découvertes qui m’a permis de découvrir en avant-première les tendances et innovations qui marqueront la prochaine édition.

En termes de tendances, voici ce qu’il faut retenir :

Le plaisir devient plus expérientiel (couleurs, textures, intensité des goûts, originalité, spicy, crispy…).

La santé devient fonctionnelle : les consommateurs recherchent de plus en plus de bénéfices précis en termes de santé (fibres, protéines, prébiotiques, probiotiques, santé digestive…).

La praticité ne suffit plus, elle doit être combinée à un bénéfice.

Les préoccupations environnementales demeurent importantes.

Trois ingrédients star émergent : l’ube, le collagène et les plantes adaptogènes.

Concernant l’innovation alimentaire, elle ne se joue plus uniquement dans l’assiette. Elle se réinvente aussi à travers les formats, les usages, les expériences et les bénéfices pour les consommateurs. C’est d’ailleurs ce que mettra en avant SIAL Innovation (qui fête ses 30 ans) avec 775 innovations sélectionnées.

A first glimpse of SIAL Paris with the SIAL Food Club

Last week (Thursday 17th of September), I had the opportunity to attend the SIAL Food Club, a networking event organized by SIAL Paris (the international food industry trade show) with food influencers and food industry professionals. The evening was a great opportunity to connect and exchange ideas with food experts and also to get a first glimpse of the key trends and innovations that will shape the upcoming edition of SIAL Paris.

Key food trends shaping the future of food to keep in mind :

Pleasure becomes more experiential with a focus on colours, textures, intensity of flavours, spicy and crispy sensations.

Health becomes more and more functional : consumers are looking for specific health benefits (fibre, protein, prebiotics, gigestive health…).

Convenience alone is no longer enough.

Environmental concerns remains important.

Three emerging ingredients are more and more present in products : ube, collagen and adaptogenic plants.

As concerns food innovation,it goes beyong the plate and it is increasingly driven by new formats, evolving uses, new experiences and tangible benefits for consumers. All this will be at the heart of SIAL Innovation (highlighting the most disruptive food innovations of the trade fair) and which celebrates its 30th anniversary this year.
